My Top 15 Favorite Recipes From 2017+My 2017 Recap

     2017, what a year, what a year! 2017 was an immense adjustment and learning year for me. Starting in January 2017, I left traditional high school because I was not able to get through a whole school day. Back in 2014, I suffered a serious concussion, and to this day, I have still not fully healed; therefore, making it more than difficult to function like a normal teenage high school student. So, after much consideration, I began homeschooling for the first time in my life. It was quite strange, at first, not living the same life I had been living for 12 out of 15 years of my life. Waking up, going to a school building for seven hours, coming home and doing homework (3-4 out of five days a school week, staying up until ungodly hours doing homework), then going to bed. However, I was able to take a step back and just, breathe. It was in this evaluation period that I found the path of spreading veganism. I had been vegan for just under a year, and I was ready to share with the world just how wonderful a healthy, vegan lifestyle could be.

     In late January, I started my Instagram account (@LoveThroughPlants) just for fun, to share what I ate as a vegan. As time progressed, I really became enamored with cooking, and developed a deep passion for creating my own plant-based recipes with a concentration on healthy, real-food that not only tastes great but also nourishes the body and mind. Fast forward to March, and was born! I began to develop recipes on a weekly (more like daily) basis, share how to live a healthy, vegan lifestyle, and really become creative in the kitchen. Throughout my life, I had never minded cooking; however, I never had a great passion for cooking. Now, at age 16, the kitchen is now where I am located whenever I am given the chance.

     Month after month, I made it my mission to create top-quality recipes, and to grow and share LoveThroughPlants with more and more people, both vegans and aspiring vegans alike. I had never experienced so much joy as when so many of you made my recipes and had so many kind words to say about LoveThroughPlants. I felt as though this is what I was meant to do. Helping others live to their utmost full potential is my top priority. It is my goal for you to love yourself, your body, your health, innocent animals, and our planet that we call home through merely eating healthy, plant-based food, and living a life of compassion and advocacy for the cruelty of animals. It takes just one simple switch to a healthy vegan lifestyle to rebuild your health, and to dissolve so much extraneous animosity towards animals. 2017 was the year I stopped sitting idly by, watching so many animals suffer cruelty and so many humans being forced to endure preventable illnesses. LoveThroughPlants was created to help.

     Whether you have been following LoveThroughPlants from the beginning, have only just heard of LoveThroughPlants, or met somewhere in the middle, thank YOU for making LoveThroughPlants what it is today. I am beyond grateful to be able to share plant-based recipes and snippets of my life with all of you. Here’s to making 2018 an even better year!
