Southern BBQ Pizza

Gluten-Free, Soy-Free, Oil-Free, Grain-Free, Vegan (of course!)

Pizza and BBQ. Two of my favorite foods morphed to create this beauty of a pie! This deliciousness all starts with a delectable, grain-free sweet potato crust (swoon!), then the crust is piled high with saucy, BBQ beans and a creamy cashew cheesy sauce, and then the pie is topped off with some red onion and cherry tomatoes! So many goodies collaborating to compose such a heavenly meal!

Ingredients:

For the crust:

  • 1½ cups of sweet potato pureé
  • ⅓ of a cup + one tbsp. of coconut flour
  • One tbsp. of baking powder
  • ¼ of a tsp. of garlic powder
  • ¼ of a tsp. of dried basil
  • ¼ of a tsp. of dried oregano
  • ⅛ of a tsp. of onion powder
  • Pinch of salt and pepper

For the BBQ:

  • One 15 oz. can of kidney beans, drained and rinsed thoroughly
  • ¾ of a cup of tomato sauce (salt-free if possible)
  • Two tsp. of apple cider vinegar
  • One tsp. of coconut aminos (or soy sauce)
  • One tbsp. of applesauce
  • One tsp. of smoked paprika
  • ½ of a tsp. of garlic powder
  • ¼ of a tsp. of onion powder
  • Dash of ground cayenne pepper (or to taste)
  • Small dash of ground cloves
  • Small dash of nutmeg
  • Pinch a salt and pepper (or to taste)

For the cheesy sauce:

  • One cup of raw cashews, soaked
  • ¾-1 cup of water for blending
  • One tsp. of lemon juice
  • One large clove of garlic
  • ⅛ of a tsp. of onion powder
  • ¼ of a tsp. of garlic powder
  • Pinch of salt (or to taste)

For topping:

  • Red onion slices (the more the better!)
  • Quartered cherry tomatoes

How to make:

  1. Place and soak the cashews in a bowl with enough hot water to cover them for at least one hour.
  2. Preheat your oven to 400 degrees Fahrenheit, and line a baking sheet with parchment paper.
  3. In a large bowl, combine the crust ingredients until fully combined to form a dough.
  4. Place the dough onto the lined baking sheet, then form the dough into a ¼ of an inch thick crust shape of your choice.
  5. Bake the crust for 20 minutes.
  6. While the crust bakes, place all of the BBQ ingredients into a medium-sized pot over medium heat, then stir to evenly combine. Once the mixture is hot, turn off the stove and cover the mixture until it is time to assemble the pizza.
  7. Drain the cashews and discard the water, then blend the cashews with ¾-1 cup of fresh water in a high-speed blender until smooth and creamy.
  8. Blend the remaining cheesy sauce ingredients into the cashews until homogeneous.
  9. Once the crust has finished baking, evenly spread the BBQ mixture onto the crust, then place the red onions onto the pizza, then drizzle the cheesy sauce onto the pizza, and then top the pizza with cherry tomatoes.
  10. Bake the pizza at 350 degrees Fahrenheit for 15 minutes.
  11. Serve and enjoy!
