Superfood Pumpkin Spice Cookies

Gluten-free, Soy-free, Oil-free, and Vegan (of course!)

Kick off October right with these Superfood Pumpkin Spice Cookies! These cookies are filled with healthy plant-based ingredients, along with the superfood Lucuma. Lucuma is a Peruvian fruit that contains superior elements of beta carotene, iron, zinc, vitamin B3, calcium, and protein! Lucuma has a sweet-mapley-tea flavor and is used as a low-glycemic sweetener. With these cookies, you can enjoy a sweet treat while reaping the sweet benefits of Lucuma!

Ingredients:

For the cookies:

Dry Ingredients:

  • ¾ of a cup of buckwheat flour
  • ⅓ of a cup of coconut flour
  • One and a half tsp. of cinnamon
  • ¼ of a tsp. of cloves
  • ¼ of a tsp. of ground ginger
  • ⅛ of a tsp. of nutmeg
  • ¼ of a tsp. of baking soda
  • ½ tsp. of baking powder
  • Two tbsp. of  lucuma powder
  • Pinch of salt

Wet Ingredients:

  • ¼ of a cup of maple syrup
  • ½ of a cup of pumpkin puree
  • One tsp. of vanilla
  • ½ of a cup of water
  • Two tbsp. of melted coconut butter

For the filling:

  • ⅔ of a cup of pumpkin puree
  • Two tbsp. of lucuma powder
  • ¼ of a cup of maple syrup
  • One and half tsp. of cinnamon
  • ⅛ of a tsp. of cloves
  • ⅛ of a tsp. of ground ginger
  • Dash of a tsp. nutmeg

How to make:

  1. Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a large bowl, combine the dry cookie ingredients.
  3. Stir the wet cookie ingredients into the dry cookie ingredients until homogeneous.
  4. Form the dough into an even number of medium-large, flat cookie shapes.
  5. Bake the cookies for 15 minutes.
  6. While the cookies bake, make the filling by mixing the filling ingredients in a medium-sized bowl until fully combined.
  7. Once the cookies are done baking, take them out of the oven and allow them to cool.
  8. Once the cookies have cooled, place the filling evenly on half of the cookies, then place the unfrosted cookies on top of the frosted cookies to make a sandwich.
  9. Serve and enjoy!
